An intensive but fun, 5 day course, run by an experienced chalet cook. It is designed to give you all the essential skills and knowledge you will need to work as a ski season chalet cook.
This course is for students who already have a good grounding in basic cooking techniques (see our basics course if required), the course will boost your confidence, develop your culinary skills and knowledge and give you all the tools you need to deliver high quality meals to paying guests.
During the week you will learn how to make a multitude of delicious dishes but more importantly we will show you short cuts and pass on valuable tips of the trade, teach you how to handle disasters and equip you to cope with the unexpected problems you may come across while cooking at altitude.
In addition, we will help you to learn how to design, plan and budget your own menus, how to accommodate guests with food allergies or restrictions and how to tackle the all important time management so that you can spend the maximum amount of time on the piste.
All students will receive our Ski Season Handbook which gives detailed menu plans, recipes and invaluable advice, allowing you to make the most of your ski season.
The course will run from 9.30am – 2.30pm with students sitting down together each lunchtime to share the food they have cooked.
